I have decided to change the font on my blog, much as I loved the old one, it isn't the easiest to read and reading is the whole point! Hope it still looks ok!
Am dedicating this change to Uncle Col, so now he has no excuses not to read my blurb!
Here's Uncle Col's Damson Jam Recipe: 1: Get a big pan. Throw in as many damsons as you can, bring to boil slowly, simmer until fruit breaks down, chuck in a load of sugar but only bit by bit and keep tasting. You don't want it too sweet 'cos the whole point of damsons are their sharpness. Bring back to boil and simmer again. Check setting point by spooning a bit of the juice onto a cold plate (have ready in fridge). Pass the spoon through the middle of the pool of juice to separate it. If it stays separate and forms a little ridge, it should be ok. Pot up when cool in sterilised jars. Oh I forgot.... Three musts: 1: Take the stones out! (before or after cooking) 2: Don't let the damsons burn at the bottom of the pan - like I did! 3: Remember always that if you boil the damsons too hard you end up with a deep red ceiling and floor - like I did! Other than that damson jam is superb. Sweet, sharp and a beautiful colour. Enjoy.
